Avocado BLT Grilled Cheese (Printable)

A decadent BLT variation featuring crispy bacon, fresh vegetables, creamy avocado, and melted cheese on golden buttery bread.

# What You Need:

→ Bread & Dairy

01 - 4 slices sourdough or country white bread
02 - 2 tablespoons unsalted butter, softened
03 - 4 slices cheddar or Monterey Jack cheese

→ Meats

04 - 4 slices thick-cut bacon

→ Vegetables

05 - 1 ripe avocado, sliced
06 - 1 medium tomato, sliced
07 - 2 leaves romaine or butter lettuce

→ Condiments & Seasoning

08 - Salt and freshly ground black pepper to taste

# Steps:

01 - Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels.
02 - Lightly butter one side of each bread slice.
03 - Place two bread slices, buttered side down, on a clean surface. Layer each with a slice of cheese, bacon, lettuce, tomato, and avocado. Season avocado and tomato with salt and pepper. Top with the remaining cheese slices, then the remaining bread, buttered side up.
04 - Heat a large nonstick skillet or griddle over medium-low heat. Place sandwiches in the skillet and cook until golden brown and cheese is melted, approximately 3 to 4 minutes per side, pressing gently with a spatula.
05 - Remove from skillet, let cool for 1 to 2 minutes, slice in half, and serve immediately.

# Expert Tips:

01 -
  • It turns a childhood favorite into something that feels grown up and satisfying without any fancy ingredients.
  • The creamy avocado cools down the crispy bacon and creates this perfect balance you did not know you needed.
  • It comes together so fast you can make it on a busy weeknight or a lazy Sunday morning.
  • Every bite has crunch, melt, and freshness all at once.
02 -
  • If your heat is too high, the bread will burn before the cheese melts, so keep it on medium low and be patient.
  • Softening the butter first means you can spread it without tearing the bread, which I learned after ruining more slices than I want to admit.
  • Do not skip seasoning the avocado and tomato, because that is where a lot of the flavor actually lives.
03 -
  • Press down gently with your spatula while grilling to help the cheese melt faster and bind everything together.
  • Let the sandwich rest for a minute or two after cooking so the cheese sets slightly and does not all slide out when you cut it.
  • Use a serrated knife to slice through the sandwich cleanly without squishing all the fillings out the sides.
