# Expert Tips:

01 -
  • It packs serious protein without sacrificing pizza satisfaction—your gym buddy will be jealous.
  • The flatbread base is surprisingly quick and forgiving—even if you forget to preheat the oven.
02 -
  • Trying to spread the batter too thin or too thick leads to wildly uneven baking—aim for about 1/4 inch every time.
  • Blending cottage cheese until completely smooth is crucial or you’ll get uneven pockets that ruin the flatbread.
03 -
  • Let the blended cottage cheese rest for a minute to settle the bubbles—it helps the flatbread set evenly.
  • Don’t skip the fresh basil—its brightness takes this from good to memorable.
