# Steps:
01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Blend cottage cheese in a blender or food processor until smooth.
03 - In a mixing bowl, mix the blended cottage cheese with eggs, oat flour, grated Parmesan, salt, garlic powder, and dried oregano until a thick batter forms.
04 - Divide batter in half, spoon onto the prepared baking sheet, and spread each portion into oval or round flatbreads about 1/4 inch thick.
05 - Bake for 15 minutes or until flatbreads are firm and lightly golden.
06 - Remove from oven. Spread pizza sauce onto each flatbread. Top with shredded mozzarella, cherry tomatoes, black olives, spinach leaves, and other desired toppings.
07 - Return to oven and bake for an additional 5 minutes, or until cheese is melted and bubbly.
